Shou has starred in several films including City War, Tiger Cage 2, Fatal Termination, Mortal Kombat, Mortal Kombat: Annihilation, 18 Fingers of Death!, DOA: Dead or Alive, Death Race, Street Fighter: The Legend of Chun-Li, Death Race 2, and Death Race 3: Inferno. He has also appeared in episodes of the TV series Yellowthread Street, Soldier Soldier, The Outer Limits, and Cold Case. Shou wrote, produced, and directed the documentary Red Trousers: The Life of the Hong Kong Stuntmen in 2003.
